The factory start to work at 3:30 am but at 2:00 am start the milk gathering. The first operation made on the milk is the pasteurization then start the production. The first cheese done is the PASTA FILATA (mozzarella ecc) followed by RICOTTA, TOMINI and TOME FRESCHE. With the remaining milk CACIOCALALLO and SCAMORZE and weekly the smoked cheese.
